Removal of one ovary doesn’t have any life threatening effects, so yes, one would lead a fairly normal life even after losing one ovary. The body continues making the same amount of estrogen it always did. Even ovulation where release of egg normally alternates between the two ovaries, when one is removed, the other ovary takes over the entire fertility function, popping out an egg each month and continuing to produce estrogen.
Some research suggests, however, that women with one ovary may experience menopause earlier than women with two ovaries. But for the most part one leaves a normal life.
